It will be an opportunity to highlight the trends, the new generation and the diverse cuisines that Canada has to offer.

Erica KARBELNIK

Chef, former Top Chef Canada season 9 winner

Chef Erica Karbelnik began cooking at a young age with her mom by her side, hosting weekly dinner parties and recipe testing. It was there, in her home kitchen, that sparked her passion for culinary arts.
 
At 17, chef Erica started cooking professionally. She worked as an apprentice under chef Mark McEwan at ONE Restaurant, which led to a full-time position.
 
Since, chef Erica has travelled across the globe, bringing flavours from each country into her cooking. She has gone back and forth from Toronto to Vancouver, working alongside some of Canada’s most recognized chefs, training in French Italian cuisine and specializing in handmade pasta.
 
Chef Erica competed alongside her husband and fellow chef, Josh Karbelnik, in Food Network Canada’s Top Chef Canada, where she took home the title and grand prize. During this competition, she honed into her Moroccan Israeli background bringing those flavours to the table and finding her stride in her cooking style.
 
Recently, Chef Erica represented Canada in the V1 Campeonato Mundial De Tapas in Spain against 15 of the world’s best for the chance to earn the title. She has also been named the Culinary Ambassador of NBA Courtside Restaurant where she will oversee its globally inspired menu created by Executive Chef Myles Sam.

Chuck HUGHES

Celebrity Chef, Media Personality & Canadian Restauranteur

Chuck is the multi-talented star of Food Network Canada and Cooking Channel (US) series, Chuck’s Day Off, Chuck’s Week Off, Chuck’s World and Chuck & Danny’s Road Trip. He is currently filming his 4th season of Chuck and the First Peoples’ Kitchen.
 
A defining moment in Chuck’s career took place in 2011, when he walked into New York City’s, Kitchen Stadium and became the youngest Canadian chef to win Food Network’s, Iron Chef America.
 
Off air, he is the co-owner and executive chef of renowned Montreal hot-spot, Garde-Manger. He is also the author of best-selling cookbooks, “Garde Manger” and “Chuck’s Day Off.” His unbridled passion for entertaining translates into both unforgettable food and captivating television.
 
In 2015, he launched his highly anticipated line of food products sold in major and independent grocery stores throughout Canada. My Kitchen Staples are an assortment of his essential pantry items he uses both at home and in his restaurants.

Stefano FAITA

Author, food writer, guest chef on TV shows, founder of "Stefano Faita" brand

Stefano Faita is the person (and the face) behind the Stefano Faita brand created in 2017 with his partner, Chef Michele Forgione. Together, they crafted an entire range of Italian products – sold in grocery stores across the country – all made from simple, good and authentic ingredients: pasta sauces, pizzas, pasta, sausages, panettone, tiramisù, hazelnut-cocoa spread, olive oil and more.
 
He spent his childhood behind the counter of Quincaillerie Dante, the family store located in Montreal’s Little Italy neighbourhood and grew up watching his mother Elena prepare pasta, tomato sauces and other Italian specialties. He very quickly stopped being a spectator and discovered a true passion for cooking.
 
Author of 3 cookbooks, food writer, guest chef on many TV shows like City Line, he also hosted CBC’s In The Kitchen, which still runs on TLN.
 
He has also opened 4 restaurants since 2013 in Montreal with his partner Chef Forgione—Gema Pizzeria, Impasto, Chez Tousignant and Vesta Pizzeria.

Michele FORGIONE

Montreal chef, restaurateur, co-owner and culinary director of the "Stefano Faita" brand

Michele Forgione is a Montreal Chef, restaurateur and co-owner and culinary director of the Stefano Faita brand with his partner, Stefano Faita. Together, they crafted an entire range of Italian products – sold in grocery stores across the country – all made from simple and good ingredients: pasta sauces, pizzas, pasta, sausages, panettone, tiramisù, hazelnut-cocoa spread, olive oil and more.
 
Executive Chef/co-owner of four restaurants (Impasto, Pizzeria Gema, Chez Tousignant and Vesta) located in the heart of Montreal’s Little Italy. Forgione comes from a long line of excellent home cooks, yet his formal training took place at the Pius X Culinary Institute, followed by the Institut de Tourisme et d’Hôtellerie du Québec in pastry and baking.
 
He has also appeared on numerous television programs like Wall of Chefs and recently hosted Mangia Quebec on TLN. He is (co-author) of his first cookbook Montrealissimo history of food of the Italian-Montrealers.

Matty Matheson

Chef, restaurateur, author and TV personality

One of Canada’s most celebrated and recognizable chefs, Matty Matheson is an internationally renowned chef, restaurateur, two-time New York Times best-selling author (Matty Matheson: A Cookbook and Home Style Cookery), producer and television personality. He has been acclaimed by Architectural Digest, The New York Times, GQ, i-D, Jimmy Kimmel Live, Late Night With Seth Meyers, The Kelly Clarkson Show and more. With 100M+ YouTube views across his original cooking shows, 5 active restaurants in Canada (including the acclaimed Prime Seafood Palace), his Matheson Cookware brand and Canadian workwear line Rosa Rugosa, Matheson has proved himself to be a true talent. Most notably, 2022 saw him step into new roles as an actor and co-producer on FX’s breakout hit show The Bear, which was recently renewed for season 2.

Matthew Ravenscroft believes in the power of plants and has focused the last years of his culinary career on showcasing the beauty, flavour and diversity of the plant-based world in cooking. He has worked alongside some of Canada’s best chefs, travelled globally for pop-ups and continues to encourage the world to eat their damn veggies.

Maximizing Profit and Flavour, Mastering Cost-Effective Cooking – Seared duck breast, radicchio, truffled pear & sunchoke: Showcasing how to utilize the whole duck, to give you maximum profit, how to use the pear and sunchoke in more ways than one, as well as the radicchio, giving you multiple dishes on a menu with minimal ingredients.
 
SESSION 2: Chuck Hughes & The Wild Basket
 
Sustainable farming with ancestral practices – discussion – Chef Chuck Hughes will share the stage alongside his friends, Tara Dantouze and Lindsay McLaren-Polson, from The Wild Basket. Cooking with locally harvested mushrooms from the Timiskaming First Nations community, they will be discussing the purpose and practices behind The Wild Basket and the importance of sustainable harvesting to meet the needs of future generations.
 
SESSION 3: Erica Karbelnik
 
Quickfire Challenge with SIAL Innovation products– Chef Erica Karbelnik will push the boundaries of creativity by cooking with products from the SIAL Innovation 2023 competition. She will focus on combining consumer goods to cook a tasty, colorful, and nutritious dish.

From our Table to Yours, Own the Change Student and Young Chefs Competition (by Taste USA)
TASTEUSA is sponsoring a student culinary competition where students come to share their interpretation of the Own the Change theme and that is sure to be informative and entertaining for all attendees to the show. Each student will be judged not only on their culinary skills, but their knowledge of those USA sourced ingredients/commodities they use in their cuisine.
